Unexpectedness

Yesterday was my first day back on the Primal train and overall it went well.... although there were a few hiccups!

Firstly, I decided to have a coconut milk smoothie with honeydew melon and raw honey for breakfast. This WOULD have worked fine but being new to raw honey (bought for its UMF 5+ antibacterial properties) I didn't realise quite how strong and distinct its flavour would be. I did drink most of it but I have to confess - I couldn't finish it.

Lunch was going to be basic as I was making some coconut milk to use for breakfast the next day (better quality than from a can, right?) at the same time so I was supposed to have a lamb steak (with the fat!), kumara (sweet potato/yam, depending on your country), an egg and some tea with cream. Well the kumara wasn't cooked in time so it ended up just being the lamb, egg and tea. All good.

The coconut milk.... well the theory behind it is good. All coconut milk really is, is coconut blended up with water and put through a sieve to get rid of any "bits" that remain. So I got my desiccated coconut (preservative free - 2 cups), put it in a pot, poured 6 cups of boiling water on it and let it sit to soften up etc. Problem was, it was still warm when I went to blend it which meant the lid suctioned onto the blender! I eventually managed to get the lid off, then waited a while longer before blending any more. I ended up with around 900ml of coconut milk for $1.25 (so 1/4 of the price compared to the same quantity in cans and without any guar gum etc).
So this morning I went to use the coconut milk and was quite excited to see that it hadn't separated much (must be some good quality milk I made!!), went to shake it..... but it wouldn't shake. I had successfully made a nice big jar of watery coconut milk and a thick block of coconut butter. I ended up slicing through the butter and putting it in the blender with the watery milk which did work but honeydew is quite a watery melon so the whole smoothie (I left out the honey this time!) did taste quite watery.

Dinner last night was meant to be primal scotch eggs with coleslaw (balsamic vinegar for me, mayonnaise for B). We used pork mince instead of sausage meat (I find sausage meat here in New Zealand to be questionable in regards to added ingredients). It took a LOT longer to cook than anticipated (we used the oven) but it did go pretty well. If we made it again we'd had herbs and garlic to the mince for more flavour.

Todays lunch was lamb steak again (quick and easy) with kumara, egg, stir-fry coleslaw, garlic, balsamic vinegar and tea with cream. Filling and full of flavour.

I know I shouldn't drink tea with meals. The tannin in tea reduces iron absorption but it really is such a filling drink and I enjoy it a lot. I still have plenty of time to refine my meals anyway so I'm not going to get hung up about it.
